Holiday Pork Roast

What you need:

  • 1 2-kilogram boneless pork loin roast
  • 1 apple, sliced
  • 1 orange, zested
  • 4 cups whole berry cranberry sauce
  • 2 cups chicken broth
  • 2 tablespoons ground cinnamon
  • 1 teaspoon whole cloves
  • 1 teaspoon ground ginger
  • 1 teaspoon ground nutmeg

Place pork loin roast on a large roasting pan. Push cloves into the pork then cover roast with apple slices. Set aside. In a large bowl, mash cranberry sauce then add chicken broth, cinnamon, ginger and nutmeg. Pour half of the mixture over roast. Cover the roast with aluminum foil then bake in a pre-heated oven (400 degrees F) for 20 to 30 minutes. Pour remaining sauce over the meat, sprinkle with orange zest then return to the oven. Bake for another 30 minutes.

Pomegranate Pork Delight

What you need:

  • 1 1 1/2-kilogram bone-in pork shoulder roast
  • 3/4 cup pomegranate juice
  • 2 tablespoons turbinado sugar
  • 2 tablespoons balsamic vinegar
  • 2 teaspoons minced garlic
  • 1/4 teaspoon ground cinnamon
  • Kosher salt and ground black pepper to taste

Place pork on a roasting pan and season with garlic, kosher salt and black pepper. Bake in a pre-heated oven (325 degrees F) for 1 hour. Bring the pomegranate juice to a boil in a saucepan over medium heat until reduced by half. Turn off heat then add sugar, balsamic vinegar and cinnamon. When pork is ready, brush pomegranate mixture evenly onto the meat. Return to the oven and continue roasting until internal temperature has reached 180 degrees F. Allow to cool before serving.

Fruit and Nut Stuffed Pork

What you need:

  • 1 1 1/2-kilogram rolled pork loin roast
  • 1 apple, peeled, cored and chopped
  • 1 onion, chopped
  • 1 stalk celery, diced
  • 5 cups coarse dry breadcrumbs
  • 1 1/2 cups water
  • 1 cup unsweetened applesauce
  • 1/2 cup chopped walnuts
  • 5 tablespoons butter
  • 1/2 teaspoon ground cloves
  • 1/2 teaspoon ground ginger
  • 1/2 teaspoon ground cinnamon
  • 1/2 teaspoon ground nutmeg
  • 1/2teaspoon kosher salt
  • Salt and ground black pepper to taste

In a medium saucepan over medium heat, melt the butter then cook apple, onion, celery and walnuts until vegetables are soft. Add the breadcrumbs, water and applesauce and season with cloves, ginger, cinnamon, nutmeg and kosher salt. Stir until all ingredients are well-combined. Place the pork on a roasting pan, unroll and season with salt and pepper. Spoon fruit and nut mixture over the roast, roll the meat back and secure with kitchen twine. Bake in a pre-heated oven (325 degrees F) for 45 to 50 minutes.
